Chicken soup for the soul



It's cold and we are looking for something fun to do!  So, we Google'd "ingredient in chicken soup" under images and named what we saw that we wanted in our soup.  Aiden had me say "check" with evey item I added to the list.  Then we made a treasure map of the grocery store.  Stars on the map told us where to look for the items on our list.  (By the way, Food Lion now has a machine right inside the door to scan your card and get coupons.  It will be set up to track your purchases and give you coupons for items you commonly buy!)  Off we went!  Gathering all of our ingredients, we navigated the store like experts.  Then we came back and got to chopping.  With careful supervision, we used pizza cutters and the pampered chef serrated rocker knife.  Pictures were taken of us in the action but just after that, it was all hands-on help!  We simmered our chicken first, along with oregano and thyme and pepper and garlic.  Then we just threw everything in as quick as it was chopped or the can was opened...canned corn, canned diced tomatoes, chopped celery, chopped carrot, frozen kidney beans, pre-cooked rice, and tomato juice.  And the taste test revealed.....drum roll!  WE all loved it!  What's amazing to me is that kids are funny about textures of certain foods.  Say I sauteed the chicken breast, they probably wouldn't have eaten as much as they did that was in the soup.  And all those veggies!  I was super proud of their hard work and very impressed with the flavor. Way to go guys!  Now that's soul food!
